Mine's usually pretty simple - hummus wraps with kale and hot lemon pickle, or a nice spicy lentil soup with fresh tomatoes on top. Oh that sounds good!!! I always love a nice tortilla with frijoles negro (or refrieds, no lard please, with green chiles, LOADS of cilantro, and fresh squeezed lime. And my favorite local mexican #4 hot sauce (wowza, way spicy. I told the owner I want my daughter to grow up to date her youngest son or else get a job there so we can get the recipe. Apparently it is cast in stone, they won't give it up even to a cute girlfriend, darn it) AmyF
Guest guest
At this stage of my life, I'm always home alone except for cats three. I never thought I would have this luxury and I revel in it. You cook what you want, if you want, and eat it whenever you feel like it. Two of my favorite quick and easy things are a Boboli whole wheat pizza with tons of veggies on it or broccoli sauteed in lots of garlic over brown rice. And of course, there's always a glass of Merlot and popcorn. :-) TM

Guest guest
This is sad, but I don't have any thing. Probably because there is no " fast and simple " recipe that I have liked.... but this is a great opp to find out what some other people eat, lol. Maybe give me some ideas! I usually eat cereal with plain soy milk, but I am off of cereal right now.
Guest guest
Yes that is sad.......now go make my peanut butter and onion sandwich...LOL I could live months on Cheerios and rice milk so I can relate, this is worse, cold canned green beans right out of the can will do too. Guest guest
Just about anything I grab from the fridge, a wrap is alwqys good with non-lunch-meat and cheese, I make wraps from the romaine leaves. Brad
Guest guest
I like to grate veggies and add some mayo and s few chopped nuts and stuff a pita or I will boil a potato or two and smash with a fork and add a topping of grated cheese or I make a mock egg salad up from tofu and make lettuce wraps with it. Guest guest
Sometimes it's cereal, sometimes it's a scramble with eggs, green onions & soy sausage or pretend " canadian bacon " . Or of course, leftovers since veg recipes usually yield so much food!! A favorite snack lately has been celery + peanut butter. Used to eat that alot when I was younger and just recently rediscovered it.
