Guest guest Posted April 14, 2006 Report Share Posted April 14, 2006 Cacik (pronounce djadjik) is the Turkish equivalent of the Greek Tzatziki or the Indian Cucumber Raita. It is a really refreshing and cooling combination and can be made with either dill or mint. 500 g. very cold Greek-style yoghurt 1 cucumber, peeled and finely chopped or roughly grated 2 garlic cloves, minced fresh dill or fresh mint, finely chopped salt olive oil Optional additions to this are: 4 finely chopped radishes, 1 Tbsp chopped chives or spring onion. If using these you could leave out the garlic. Combine cucumber and garlic and/or radish and chives or spring onion. Season with salt and pour over yoghurt. Chill and garnish with chopped fresh mint or dill. You can thin this down with some water and the juice of half a lemon to make a cold cucumber and yoghurt soup.
