Hi, Tam, and welcome! My nest emptied out a few years ago and I, too, live

alone. I either cook and freeze or cook and eat it until it's gone. LOL

Fortunately, I'm not one of those people who don't do leftovers. If I liked it

the first time, I'll like it the second or third.

Hi all,

I got a wonderful surprise when an invitation to join this group

showed up unexpectedly in my mailbox so of course I signed right up. I

was a vegetarian (lacto-ovo) for 10 years when I was living abroad and

then moved to the States and became a meat-eater again. However, I've

been back to lacto-ovo vegetarianism for almost a year now and I have

no intention of every going back - can't understand why I did in the

first place :-). I'm finding I enjoy food much more without meat.

 

I'll try to post some stuff, though most of what I make is single

servings, since I live alone and cook for myself. Hopefully there are

some singles out there who would benefit from recipes like mine. And

I'm more than happy to try others - I'm always looking to broaden my

recipe reperatoire, though I'm not eating many grains right now -

mostly beans, cheeses, eggs, tofu, vegetarian burgers, and lots and

lots of veggies!

Welcome Tammy. I know you will love it here. I would love to see your

recipes. Any of us with families can just adjust the amounts. Thank
