I have had some bitter ones, I think they are the more mature, thicker

skinned ones. I have a frozen eggplant parmesan in the freezer, I'm getting a

taste for it....guess what we're having for dinner tomorrow?? AmyF

but you're in CA, right? It will be a while for us here. I need a new bunch

for my cross-stitched sachet I made so many moons ago. Our magnolias are just

coming out, the redbuds are pretty close behind. but we're zone 5. AmyF

I saw my lavender is in flull bloon now. Time to pick and dry some .

Here's Lorri's recipe, it's in the eggplant folder.

 

 

I read in some cooking magazine that the salting & draining helps the bitter

juices leach out of the eggplant. Then you can rinse it and remove the

salt. I use a very similar recipe to Lorri's.

 

I can't wait to get my basil plants going.....and my cilantro, chives,

scallions, tomatoes, and my garlic should be popping up any day now that the

weather is nice. ahhhh, spring! amyF
