Guest guest Posted April 17, 2006 Report Share Posted April 17, 2006 You can cook it. I accidentally cooked some last summer when I thought I was buying spinach. Got it home, sauteed it with some olive oil, kalamata olives and red chili flakes and thought Wow, this spinach is really peppery-tasting. Then I actually looked at what was left and thought it was really funny-looking spinach too. lol. We also had it steamed with some lemon sauce like we usually do spinach and it was tasty. It cooks a lot faster than spinach though so if you overcook it you might end up with just slime. I bet it would make a nice pesto, maybe with walnuts instead if pine to play up the little bitter taste. Mmmm ideas... They have an awesome Pasta with Caramelized Onions that uses arugula, walnuts and blue cheese. I've made a vegan version (using seasoned tofu for the cheese) but I don't know if I have the recipe typed up anywhere.
