These are quick and easy standbyes for adding some bite to pasta, rice, bulgar

or couscous.

Sprinkle over yogurt for a marinade or as soup thinned with vinegar. Play, play,

play....

ALL PURPOSE TURKISH SPICE MIX

1 1/2 teaspoon dried savory

1 tablespoon pickling spice

1/2 teaspoon ground cinnamon

1/2 teaspoon nutmeg

1/2 teaspoon crushed mint leaves

1/2 teaspoon ground cumin

1 teaspoon ground black pepper

 

 

Mix all ingredients together.

ALL PURPOSE NORTH AFRICAN SPICE MIX

6 allspice berries

4 cloves

1 1/2 teaspoons black peppercorns

1 1/4 teaspoons coriander seeds

1 teaspoon cumin

1/4 teaspoon cayenne

1/2 teaspoon cinnamon

1 teaspoon ginger

 

 

Mortar all ingredients together.

ALL PURPOSE SYRIAN SPICE MIX

2 tablespoons pickling spice

2 tablespoons allspice berries

1 tablespoon ground cinnamon

1/2 tablespoon whole cloves

1 tablespoon black peppercorns

1/2 whole nutmeg

 

 

 

1. Blend everything together.

2. Strain coarsely.

ALL PURPOSE TUNISIAN SPICE MIX

2 tablespoons coriander seeds

1 tablespoon caraway seeds

4 garlic cloves

2 teaspoons dried red chilies

 

 

1. Crush all of the ingredients together.

2. Dry in oven on low for about 30 minutes.
