Help with Plantains

Greetings group,

 

I don't post much but would love some tips on cooking with Plantains.

I tried baking one last night and it turned out fine, but rather dry.

I don't like to use oil, so I'm hoping to avoid fried Plantain ideas,

which are plentiful. With the baked Plantain I did a veggie bake in

the oven to pour over it. I baked apples, brocolli, purple onions,

chickpeas, garlic chunks, veggie broth, vinegar, chili powder, and

lemon zest. It was interesting.........I love to cook with new

things, the other veggie I've been playing with is the Yucca root.

It' has an amazing flavor just steamed.

you say you like to cook with new things -- would you consider making it

with butter since you don't like to use oil? my daughter sometimes makes

this for breakfast. the smell while it's cooking is heavenly.

 

a favorite Filipino thing that we do with plantains is to slice them up into

batons, add a sliver of jackfruit (available in cans in Asian stores) and a

bit of brown sugar. Wrap it up in a spring roll wrapper and pan-fry or

deep-fry. Absolutely delish. but yes, you'd have to use oil for that one:(

 

you could also poach it in a bit of syrup. yum.
