The bread is a little sweet, and the raisins add to that....just remember to check your teeth after you eat a chunk of it! haha. If you end up using poppy seeds, let me know how it turns out... I have one more recipe for a springform pan that you might like. I just recently got mine, too. It's for a cream cheese strawberry torte with an almond crust. It's really easy to make, and it's a no- bake item. I have to look it up this weekend. When I find it, I can post it for you. Happy cooking! Yup! :-) This is really more dense, a poundcake, but I use it for muffins too. If anyone has a copy of Crescent Dragonwagon's Dairy Hollow House Soup & Bread cookbook - my true favorite, and more " fluffy " less dense, was her " Sweetness and Light " muffin base. (Unfortunately I had a cat with a UTI so my copy of that book is no more.) (reposted from the files) ORANGE AND POPPY SEED POUND CAKE 2 c whole wheat pastry flour 1 tsp baking powder 1/2 tsp salt 1 3/4 c sugar 1 1/4 c (2 1/2 sticks) unsalted butter, room temperature 5 eggs 1/3 c orange juice (I use half juice, half thawed frozen concentrate 1 1/2 tbsp grated orange peel (grind peels in a food processor or use a zester, or sometimes you can even frozen zest) 1 tsp vanilla extract 1/4 c poppy seeds Preheat oven to 350°F. Butter and flour 2 9 " x5 " loaf pans. Sift flour, baking powder and salt into medium bowl (I just dump it all in and use a whisk on it instead of sifting). Cream sugar and butter in a large bowl until light and fluffy. Add eggs 1 at a time, beating well after each addition. Beat in orange juice, grated orange peel and vanilla extract (batter may look curdled). Beat in flour mixture and then fold in the poppy seeds. Divide batter between the two pans. Place pans in oven. Bake until tops of cakes are brown and tester inserted into center comes out clean, about 55 minutes. Cool 10 minutes on wire rack.
