I've about made it all the way thru the digests since I had some free time today, but see that there were some comments on my original post about the " mystery " pot that I've had lurking in my pantry since the early 80's--- making me feel guilty for not using it! I finally got around to taking a picture that Donna was nice enough to set up into a folder for me. What is interesting is that I was going back in some of my recipe files and found the little sheet of paper that came with the pot originally. It is referred to as a " plum shaped clay pot " (which comes up with 0 hits on Google) and the 2 (meat) recipes are by Joyce Jue from San Francisco, and after much elaborate preparation, are baked in this pot in the oven. I thought maybe with this group of people who are obviously quite involved with cooking, someone might have also bought one. When I ordered it from Williams Sonoma I was living way back in the jungle on the big Island in Hawaii, and got in the habit of ordering things from catalogs because of limited local outlets. I admit, I got carried away with this one! I pictured it being a neat veggie steamer, but actually, it didn't work as well as just the steel basket inside a pot.. Thanks to Guru and Christie for posting! That tagine looks pretty interesting, Christie! Here's the link to the pic! http://ph./photos/view/d15e?b=1 There is a hole in the cone and the knob on the lid is hollowed inside to allow steam or heat to collect from the hole and fall down into the pot. I came up with the same thing Amy ( I think it was her) did. I came up with the tajeen also. Have you checked with Williams Sonoma? (minus the lid) I'm not sure I'd recommend a loaf in the pan as it would retain moisture and keep the loaves sort of mushy.. unless you take the cover off for a bit during last part of cooking. I would try a seitan roast or something along those lines where you can benefit from the steam. Roasts need to keep their moisture, so you could probably cook one up quite successfully and have a really nice presentation. It would be great for holidays/special occasions. Any recipes that would benefit from cooking in their own juices.... (I know - like what?! lol) I posted this on another recipe board and will get back with their response. I'd love to know how a roast works in it though. I've seen similar covered pots (without the cone in the center) used for this purpose.
