Anyway... there are many vegetarian cheeses out there made with vegetable enzymes. Because of new labeling requirements due to food allergies all cheeses in the near future should be labeled animal or vegetable rennet. I am not sure what the date is for the labeling requirements to go into effect... I think it is 2007 but many companies have already started. If you are shopping in the cheese section at Whole Foods don't hesitate to ask them if the cheese contains animal or veg. rennet. If they do not know they should make every effort to find out for you (it is their job and a company requirement). Over the holidays I was looking for brie and the specialty team leader (that is what a cheese and wine dept. manager is called) took two weeks to track down veggie brie for me. He called the distributor, the company in France, etc. (BTW, its Arc de Triomphe brie) I have also found a really quick and delicious vegan mac & cheese recipe courtesy of the blog Get Sconed! (http://letsgetsconed.blogspot.com) This takes no time at all to whip up and (no offense) is much better for you than Stouffers :-). Ellen's Macaroni and " Cheese " Boil water and cook preferred noodles, curly noodles work best. While the noodles are cooking, mix the following dry ingredients in a saucepan (not on heat): 1/2 cup nutritional yeast flakes or powder (I prefer powder, and get it in bulk bins) 1/2 unbleached flour 1 tsp salt 1/2 tsp - 3/4 tsp paprika 1/2 tsp - 3/4 tsp garlic powder 1/4 teaspoon black pepper Turning the heat to low, stir in the following: 1.5 cups plain/original nondairy milk* 1/2 cup water Stir over heat until thick and well-warmed. Remove from heat, add 2 tablespoons of margarine, and add to 4-6 servings of the cooked and drained pasta. Optional: add in greens beans, peas, broccoli, whatever you like~ The sauce is very versatile, so play with it - add to nachos, use in a pasta bake,a dip, etc. Whitney --- debra mimaroglu <carrottop638 wrote: > We do this too.
