I haven't made these in ages. It's from the Gold

Medal Flour Cookbook 1917. It's an old cookbook bound

together with thick string.

Rice Croquettes

1 cup hot boiled rice

1 teaspoon sugar

1 teaspoon butter

1/4 teaspoon salt

1 egg

2 tablespoons milk

Beat the ingredients together to the consistency of a

firm paste. Shape into oval balls and dip into

breadcrumbs, beaten egg and breadcrumbs again.

Deep fry until browned and drain on soft paper towels.

These are nice with a plumped raisin or a candied

cherry pushed into the center before frying. Serve

with maple sauce.

They really are. I like to push a chunk of a date

inside before frying. I use the wok to fry them.

The cal-rose short grain sticky rice doesn't work as

well, use long grain basmati or jasmine rice.
