Barley Bale with Mushrooms and Herbs

I don't have an old cookbook but this is a recipe that

my Mom made us and she grew up on it too.

I'd like to share it and since it's almost Mother's Day

someone in here might like to give it a go.

 

Barley Bake with Mushrooms and Herbs

 

1 large sweet onion, minced

1/2 stick butter or margarine

1/2 pound fresh mushrooms, sliced

1 cup pearl barley

1 tsp. salt

3 cups hot broth

1 tsp. dried thyme

1/2 tsp. dried marjoram

1/2 tsp. dried rosemary

1/4 tsp. dried sage

1/4 tsp. summer savory

 

Preheat oven to 350 degrees (F). In a large ovenproof pan, sauté onion in

butter for 3 to 5 minutes or until soft. Add mushrooms and cook for 3 minutes.

Stir in pearl barley, salt, thyme, marjoram, crushed rosemary, sage, and savory.

Sauté over moderately high heat, stirring for 3 minutes to coat barley. Add hot

broth and bring to a boil. Bake in oven, covered for 55 minutes.

Oooh, I love barley! In fact, tonight I'm going to try a Barley Baked

Beans recipe. Thanks for posting this one! (Though I am never sure

what to substitute for mushrooms, which my kids hate.)

Maybe add some extra onions or a crumbles veggie

burger towards the end of baking.

The extra onions won't fly, but the crumbles might! One child, the

11-year-old mostly vegetarian, loves bell peppers, tolerates onions and

eats many vegies, but will have nothing to do with mushrooms. My other

child, the 13-year-old avowed carnivore, will have nothing to do with

recognizable tomatoes, and many vegies (though she'll eat spinach and

broccoli). At least both kids like tofu.
