Donna,

 

I've never tried squash this way. Do you think it works better than baking

it?

Cut a med-large spaghetti squash in half, place the halves cut-side

down in 2-inches of boiling water, cover and simmer for 45min.-1hour

or till just tender. You will need to do them a half at a time

because of the size if you are using a stockpot...all at once if you

are using a roasting pan.

I prefer boiling spaghetti squash. It gets a little

dried out in the oven.I even boil it in a little more

water and add herbs and spices, it flavors the squash

as it cooks.

I successfully cooked spaghetti squash for the first time two weeks

ago using the following instructions which were posted in the

feralvegetarian group some months ago:

" I cut mine in half, put into glass rectangular casserole dish cut

side down, with about a 1/2 inch or so of water. Bake at, what? 350

until a sharp knife easily penetrates (30 minutes or so). "

 

the result was fine, not at all dry. Of course that was the one and

only time I've ever cooked it so I have nothing to compare it with...

I add water to the pan I roast the squash in. Moisture AND caramelization.

Woowee. Adding herbs is a good idea. Hmmm.

If you don't put enough water in, it will all evaporate and the squash

can get dry
