Guest guest Posted May 13, 2006 Report Share Posted May 13, 2006 Gosh darn it anyway. After reading about the Mayo/Miracle Whip controversy, I decided to experiment making " IT " . Well I let it cook for a second too long and should have taken it from the stove as soon as it thickened. The taste is wonderful. I will still use it as a dressing for salad but it will not work for a sandwhich spread. I am excited about this recipe because I love the stuff on everything. The only problem is that it is not Vegan. I used the best range, veggie fed eggs I could buy, and I seldom buy eggs. If anyone else has ever tried makeing Mayo let me know. I will post the recipe soon. If there is anyone who wants to experiment with the recipe contact me off line. Like I said the taste is perfect. Guest guest Posted May 13, 2006 Report Share Posted May 13, 2006 Beth, After researching the ingredients of both mayo and Miracle Whip I found several recipes and decided to try the one that cooked the eggs. I could not have tolerated the raw egg dressing. I know where I made my mistake. The recipe called for the ingredients to be simmered until thickened. One recipe called for whole eggs and the others called for just the yolks. I let it come to a slight boil and the mixture immediately caused the eggs and oil to separate. I will try again. Also going to try making a mayo dressing with no eggs. As you can tell I love to experiment. The secret to both of these dressings is the white vinegar, the dry mustard, and the seasonings. Raw egg mayo wigs me out, too, but I don't eat the fresh stuff very often & I just pushed it outta my mind. Is no egg mayo still mayo? I'm developing a bearnaise craving suddenly, lol. Let us know what works & what doesn't! I experiment in my brain but don't have the time or energy to do many real experiments. It keeps me up at night.
