Guest guest
In digest #829, Erin asked: " I was at the grocery tonight looking at the pre-mades and the graham crackers, but they all have too much sodium for my tastes, so it's going to be fully from scratch. Any ideas or, better yet, tried-n-true recipes? Maybe oats or ground-up granola would work in place of grahams? " ~ My ol' Simply Heavenly cookbook has a great homemade graham cracker recipe that maybe you could play around with it to come up with a more sodium-free version for you own pie crust. Graham Crackers 2 cups whole wheat flour 1 1/2 cups unbleached all-purpose flour 2 Tbs. cornstarch 1/2 tsp. sea salt [you could skip this] 1/2 cup water 1/3 cup corn oil 1/2 cup molasses Mix all the dry ingredients. Mix all the wets in a blender. Combine together. Knead just a little. Roll out to 1/4 inch thick. Cut and prick with a fork. Bake at 375ûF for 35 minutes. ~~ Now if you want chocolate, i would just sub out some of the flour for cocoa powder. Yum! Hope this helps. ~ PT ~ You can't just let nature run wild. ~ Wally Hickel former governor of Alaska

Guest guest
Thank you, PT, for the graham cracker recipe. I'll have to try this in the future as I do like graham crackers, but now refrain from purchasing them ready-made. As for my pie crust, I combined melted semisweet chocolate chips with granola and pressed into the bottom of a 9 " pie plate and stuck into the fridge for a few hours. I actually didn't bother going up the sides with it, though I could have. Probably a springform pan would have been more appropriate for the technique I used. Oh well, it will still be delicious. The tofu peanut butter filling is already poured and the whole pie is in the fridge awaiting its debut tomorrow. -Erin www.zenpawn.com/vegblog

Guest guest
The original graham crackers were intended to be a health food, like this. (Graham is a particular grind of wheat flour, btw, where they separate the endosperm and bran/germ, grind the endosperm very finely, and add the bran/germ back. Probably the closest is regular whole wheat flour now, as it's kinda hard to find true graham flour.) Erin, if you want chocolate - I'd add some sugar to that cocoa! PS CHeck this out: http://homecooking.about.com/b/a/057102.htm (all about graham) , " ~ PT ~ " <patchouli_troll wrote: > > In digest #829, Erin asked: " I was at the grocery > tonight looking at the pre-mades and the graham > crackers, but they all have too much sodium for my > tastes, so it's going to be fully from scratch.
