Guest guest Posted May 13, 2006 Report Share Posted May 13, 2006 I have been making mayonnaise for years because I find commercial mayonnaise horrible tasting. The major problem I have with commercial mayonnaise is the quality of the vinegar that they use in it. So, I use either rice wine vinegar which is very mild or basalmic or a good red wine vinegar. I usually use olive oil although I have used all kinds of great oils, including flax oil. I hated the taste of mayonnaise until I discovered how good home made mayonnaise can be. This is my recipe: 1 whole [raw] egg 1 tblsp vinegar or lemon juice 1 tblsp [prepared] dijon mustard dash of seasoned salt, preferrably spike or frontier herbs brands to taste 1 1/4 light olve oil or other vegetable oil In a food processer, process egg, vinegar or lemon juice, mustard, salt, and 1 tblsp of the oil for 60 seconds. Slowly drip in 1/4 cup oil at a time. Taste & adjust seasonings. Cover & refrigerate. Makes about 1 1/2 cups. Kathleen M.
