Guest guest
>Has anyone come across the uncheese cookbook? What about the >ultimate uncheese cookbook? they are by the same author? > They're both written by Joanne Stepaniak, who moderates the vegan message boards over on VegSource.com >> Is there a difference? > > > The Ultimate is the newer book, and it has some repeated recipes from the original, some revised recipes, but mostly new ones. Sorry, but Jo really doesn't let people share her recipes on message boards or mailing lists so I can't send you examples, but I do know you can find some of her uncheese recipes on-line if you do a Google search. Many of them use nutritional yeast, but others use nuts, tofu, and other veg items. There are various cheese recipes, as well as recipes using the cheese, like chili cheese bake, lasagna, etc. >>What about the vegan sourcebook? Any good recipes? > That's one of the few Jo Stepaniak books I *don't* own so I can't help you with that one specifically, but I've made of her recipes from many of her other books and hubby & I have been satisfied. Other people have tried her recipes and didn't like them - it's all a matter of personal taste. Why not hit your library and see if they can get you one of her books via inter-library loan if they don't have any? That's what I usually do when I hear of a cookbook. Guest guest
Do you like those cookbooks, have your recipes come out tasty? I have both and haven't found a decent recipe yet but I do have one to try that a member recommended, I have to keep trying until I get one. THe vegan eggplant parmesan is OK hot but not good warmed up the next day. We have some vegan cheese and butter recipes in our files in the substitute recipe folder. Guest guest
I just received the book the other day and have not had a a chance to try it yet. I bought it based on recommendations from some blogs I frequent. I'm hoping that I fair better than you did though! Generally I post recipes and photos of what I try on my blog. I'll reply here with an update once I try one of the recipes. I've got a few on my list. One thing that might be worth pointing out is... Sometimes it is necessary to adjust your expectation. I'm vegetarian, but lean toward vegan. Ice cream and cheese have been a challenge to give up. The vegan cheese I find in stores is pretty bad. Last week when I was traveling in Maine, I found " Vegan Gourmet " cheese made by Follow Your Heart. So far, I have tried the cheddar. It is good. Does it taste like cheddar cheese? No, not really; however, I like the flavor and texture. My feelings are similiar sometimes with veggie meats. They don't taste like the real thing, but I like what they do taste like. I actually wondered if I had eaten vegan cheese all my life and then tried regular cheese, would I think it was weird. Funny how we get used to certain tastes or textures. Anyway, I will post updates when I try some recipes. I might give one a go tonight.

We'll plan a big veggiefest weekend. I'm trying to include a pic but I'm not holding my breath that it will show in the email. Beth Beth - if you want folks to see a pic, send it to Donna personally via her email (thelilacflower) and she will put it in the photo folder for you. The list doesn't accept attachments due to virus risks.
Guest guest
Sorry if this has been posted a thousand times before, but if not the Uncheese cookbooks...what then? Are there any OTHER fake cheese recipes recommended by this group? I just got the book about a week and a half ago...and yes, I had read all the reviews (everywhere). I figured I had a 50-50 chance of liking it. I have only made one recipe so far, (Chedda) and it was really okay. I have not tried it yet in a " grilled cheese " sandwich...that will be the test. I guess I'll have to try a couple more before I can give my opinion, but am wondering if there's a better source for these types of recipes. Thanks Jeanne >Message 12 > " cookin_freak " cookin_freak > Sat May 27, 2006 7:57am(PDT) >Re: uncheese coobooks > >Good idea.~lol~ Mary >
Guest guest
I got those books from the libraru and the chedda was so so and I tried the 2 more recipes and they were terrible. I have better use from the group files. Do you take a look in the substitute for file. There's a folder for non-dairy and there's some good ones in there.
