Guest guest Posted May 20, 2006 Report Share Posted May 20, 2006 Trinidad Coconut Bread My best friend Adrian makes this once a week, its a beautiful bread. 4 cup flour 1/3 cup sugar 2 tsps. baking powder 1/4 tsp. salt 1 egg, beaten 1 cup coconut milk 1/2 cup margarine, melted 1 tsp. vanilla extract 2 cups unsweetened shredded coconut 1 cup raisins, optional Sift dry ingredients into a mixing bowl. Blend in egg, milk, margarine and vanilla. Mix in coconut and raisins if used. Knead very lightly. Shape into 2 loaves and pat into 2 oiled medium loaf pans. Bake at 350 degrees for 40 to 45 minutes.
