Guest guest Posted May 24, 2006 Report Share Posted May 24, 2006 Crusted Asparagus Bake 24 thick fresh white asparagus, or 48 of the slender green 3 slices day old bread 1/4 cup olive oil 3 cloves garlic, finely chopped 1 1/2 tsps. sweet paprika 1 tbsp. red wine vinegar salt and pepper to taste Trim the asparagus and simmer in lightly salted water until tender, 4 to 8 minutes. Drain well. Chop the bread to crumbs, and fry in oil until lightly browned. Add the garlic and paprika along with salt and pepper to taste. Arrange asparagus in an ovenproof dish and pour the fried bread mixture over them. Place in preheated 350 degree oven for 20 minutes. Serve hot with the splash of vinegar at the end.
