Guest guest Posted May 28, 2006 Report Share Posted May 28, 2006 Duygu, In 15 minutes you can make a fantastic soup with water, a veg. bouillon cube, pinch of spices and herbs, diced potato, diced onion, 2 garlic cloves crushed, 2 or 3 cups of chopped fresh veggies or leftovers from the crisper in the fridge that need to be used up, handful of pasta, and boil it for 12-15 minutes. You can sub the pasta for a 1/2 cup of rice, even add a can of crushed tomatoes. It's really easy and inexpensive to eat healthy, believe me I'm a master of doing that. That is about as healthy of a comfort food as one can make. Now for you and me we would add a chunk of bread with butter but don't tell our Vegan friends. I have cut down on the use of it but I have no plan on getting rid of my butter or ghee, nothing in the world matched the taste. You can take a corn tortilla and fry crispty and make a tostada too. I would make sandwiches with the mashed up tofu like an eggless salad, I know there are some recipes for it in the files. Guest guest Posted May 28, 2006 Report Share Posted May 28, 2006 I've been a full-veg since the age of 12 (quarter-veg at 3yo then semi at 7 so I do understand growing up as a veg in a non-veg home. These days it's sure easier for vegetarians as far as public acceptance and food choices go. But it's still a struggle when there are no role models to learn from and finding online veg groups is wonderful for me even at the age of 36, after many years as a lacto-veg. I just recently went the full way and became a vegan within the past month (but I will be keeping my family lacto-ovo veg). Anyway, to answer your question, for those eating dairy foods, think: Legumes + cheese (like chili w/ cheese topping) Legumes + grains (like a bean burrito or minestrone soup) Grains + dairy (like nachos or cereal) Grains + nuts (like PB sandwich) And you'll be fine as far as protein goes. If youu want more balanced meals, then mix a bean, lentil or pea with a grain. Corn tortillas and pinto or kidney or black beans are classic in Mexican cookery.
