Lemon-Herb Tofu

A beautiful day here today... I got tons of yardwork done and cooked

up a new recipe.

 

Tried this and loved it both hot or cold. Taken from Dreena Burton's

Vive le Vegan cookbook. (If you don't have it, I highly recommend

it.) Photo of the finished product on my blog.

 

Lemon-Herb Tofu

3 1/2 - 4 tbsp of fresh squeezed lemon juice

2 tbsp tamari

2 - 2 1/2 tbsp of extra-virgin olive oil

1 1/2 tsp dried oregani

1 tsp dried thyme

1/2 tsp dried basil

1/2 tsp of honey alternative (I used agave nectar)

few pinches of freshly ground black pepper

12 oz of extra firm tofu cut into squares 1/4 - 1/2 " think

 

Preheat oven to 375 degrees. Combine everything except tofu in an

8x12 baking dish and stir until incorporated. Add tofu and coat all

sides with the marinade. Bake covered for 13 min. Turn tofu over and

bake uncovered for another 13-15 min. Turn again when there is just a

few minutes of cooking time. The tofu should now have soaked up most

of the marinade. Remove oven and let cool for a bit before serving.

(If any marinade remains, pour it over the tofu befor e serving.

 

Note: Mash leftovers and mix with vegan mayo for great cold sandwiches.

Jody - I tried this tonight! I left out the sweetener, and put it in

a whole grain tortilla along with a mix of black beans, bell peppers,

corn, and roasted onion. It was WONDERFUL but I am sad there are no

leftovers to try it cold! :-7 Thanks for posting it.

It is from a great cookbook! I'd highly recommend any from Dreena

I forgot to say I also only used 1 tbsp of oil. I haven't heard of

Dreena before; I will definitely go look at this cookbook! Thanks for

posting! :-)

When I made this recipe last night, I FORGOT to add the oil! The end

product, though good, was really heavy on the lemon-y side of things, a

taste of which I'm not overly fond of.

 

However, today, I mixed the leftovers with lightly steamed cauliflower,

diced; chopped up onion and celery, and about 1 cup of rinsed butter

beans. Let come to room temperature, added vegenaise to moisten, and

served on a bed of lettuce. YUM! A whole new recipe!

 

(And since I forgot the oil the first night, it is still reasonably low cal!)
