Guest guest Posted May 31, 2006 Report Share Posted May 31, 2006 This is one of my favorite recipes, I love it placed in the center of mashed potatoes or over steamed rice. It's from " The Art of Tofu " by Akasha Richmond, health food chef to the stars. Tofu Swiss Steak 1 pkg. MoriNu extra firm tofu, cut lengthwise into 1 1/2-inch strips Freeze & thaw-one hour at room temp. should do it 1/2 cup flour and mix with 1/2 tsp. salt, 1/8 tsp. pepper, 1/4 tsp. paprika and 1/4 tsp. dried thyme 2 tsps. olive oil 1 1/2 Tbls. veg. style Worcestershire sauce 1 sm. white onion, cut in half and sliced into 1/4 inch thick moons 1 garlic clove, minced (I use 2 cloves) 1/2 tsp. salt 1 1/2 cups thinly sliced red and green bell peppers 1 1/2 cups canned chopped tomatoes 1/2 cup water 2 tsps. vegetable broth powder (if you can't find veg. broth powder, make the 1/2 cup water a good strong veg. broth instead and add a shake of Mrs. Dash to it) Pat defrosted tofu with paper towels to dry out the moisture. Place flour mixture in a paper bag and add the tofu pieces. Shake gently to coat tofu and remove pieces while shaking off excess flour. Roast tofu over medium heat in a heavy skillet with one teaspoon of the olive oil When tofu is browned evenly, sprinkle with Worcestershire sauce, remove pieces while you make the sauce. Saute onion, garlic and salt in remaining 1 teaspoon olive oil over medium heat. Cook 8 to 10 minutes or until onions are translucent. Add bell peppers, pepper, thyme and paprika and cook another 5 minutes. Add tomatoes, water and broth powder. Simmer sauce for 10 minutes. Add tofu, heat through and serve.
