One of those things I got because it was " good for me " ... but I'm not normally one for cooked greens sitting on a plate - a texture thing, I think, I just can't get into it, but I like things like spanakopita. It goes great with potato - you can make a nice soup with potato & kale. It also pairs nicely with sausage. Sometimes I use it with tomatoes and pasta. I love it just sauteed in olive oil (I let it cook quite a while..like the heavier greens) - it is great with onions...my hubby who likes garlic likes a heavily garlicked serving...it is also nice with ginger or red pepper flakes...it is heavy enough to take spice...in fact, I've got a curried kale recipe somewhere if I can find it. Back on the potato theme, I do a colcannan with it (potatoes and kale basically, with butter)...again, I'll find a recipe if I can with measurements.
