Greek Basmati Rice recipe post - lacto

I Made this last night. Good twist on rice. Have leftovers for lunch today.

I'll more than likely eat at break.....LOL

 

" Greek Basmati Rice "

 

2 cups water

1 cup basmati rice

1/4 tsp. salt

2 cups fresh spinach shredded

1 tsp. snipped fresh dill (I used a dash of dried as I didn't have fresh)

1 large tomato seeded and chopped (3/4 cup)

1 tsp. lemon zest

2 Tblsp. lemon juice

1/2 cup crumbled feta cheese (2 oz.)

 

In medium saucepan bring water to boil and stir in rice and salt. Return to

boil, reduce heat, cover and simmer for 15 mins.

Stir in spinach and dill into cooked rice, cover and let stand 5 minutes.

Stir in chopped tomato, lemon zest and lemon juice. Serve and sprinkle feta

over top.

I heard something interesting about feta cheese on another group (on

Tribe.net). Did any of you know that lactose intolerant people can eat

feta cheese? As long as it's not made from cow's milk which I don't

think could be feta, but who knows.

 

Anyway, I didn't know that goat and sheep milk was so different from cow.

speaking pf milk....

I stopped drinking it altogether. It jus dawned on me and now it makes me get

the yuckies. It is because cow's milk was meant for cows? Goat's for Goats?

Humans for humans?

wait, I think I already said all this, or it might be a dejavoux or however you

spell it.

I think if we want milk we need to ask a pregnant woman to give us some. (then

wait for the police)

I don't know, it just seems yuckie to me now to drink something that has come

out of an animal's " bag "
