Orange-Jicama Salad

 

 

4 servings

 

This colorful salad uses jicama, a crunchy and sweet root vegetable

common to Latin countries. The pairing with oranges and cilantro

gives it a distinctive Mexican flair. It would be a wonderful salad

to serve with Vegetarian Chili or your favorite Mexican meal. During

the winter holidays, add some pomegranate seeds to make it even more

festive.

 

Ingridients:

4 cups jicama, peeled and julienned

2 oranges, sectioned

2 tablespoons fresh cilantro, chopped

1/3 cup fresh orange juice

2 tablespoons balsamic vinegar

1 tablespoon extra-virgin olive oil

Salt and black pepper to taste

 

Instructions

1. Mix the jicama, orange sections, and chopped coriander in a bowl.

2. Whisk together the remaining ingredients, toss with the jicama-

orange mixture, season to taste with salt and pepper, and serve.

yum! Next time I serve colache, I'm doing this salad with it...in the

meantime, I'm getting jicama today and serving this with the " chicken

burgers " planned for tonight!

*lol* I got a jicama for salad few weeks ago... ran out of time to

make the salad and forgot about the jicama... well, it's growing!

Sending long skinny vines all over the counter now.

Mmmm...a very cold jicama sounds really good in the

crazy humid weather we're having here.

 

BTW, did I tell you I tried it finally a few weeks

ago? I couldn't eat it all at once so I just kept it

in a bowl of water in the fridge for a day or two. So

great cold like that!

I also wondered how you liked the taste of jicama. It's really refreshing. I

know you like hot food so squeeze fresh lime juice over some slices and sprinkle

hot chili powder across it. That's how we eat it here in L.A. with our Mexican

food....Donna

The taste was really mild to me, which is fine. Maybe

a little chili powder and lime would be interesting

next time I have it. But there is nothing like having

something cold and crisp after a hot and humid day. It

feels like August this week, but it's only the first

week of June!
