" Psychedelic Squash Slaw " 1 med. crockneck squash (sliced then) 1 med. green summer squash (sliced thin) 2 med. zucchini (sliced thin) 1 med. red bell pepper (sliced thin) 1 cup sugar snap peas (thriimed and cut in thirds) 1/2 med. red onion (sliced thin) Dressing 3 Tblsp. olive oil 2 Tblsp. balsamic vinegar 1 Tblsp. mayonnaise of your choice (regular or vegan) 1 tsp. honey (or syrup for the vegans) 1 tsp. fresh sage or chives or both (finely snipped) 1/2 tsp. dill fresh or dried 1/2 tsp.garlic powder or a minced clove 1/2 tsp. celery seeds 1/4 tsp. pepper * optional sliced olives, chopped artichokes, diced jicama, sunflower seeds or sliced almonds on top when serving. Slice squash, zucchini, onion and red pepper as thin as possible, I use a mandoline or the smallest slicing blade on the food processor works well. Place all veggies in large bowl. Combine dressing ingredients in small bowl and whisk. Pour over veggies to blend. Refreigerate 3 hours and serve. " Those who bring sunshine to the lives of others, cannot keep it from themselves. Light green and round, oblong shape, has the scalloped edges, comes in yellow and that one is called sunburst. I totally forgot about them, and I've never bought them, not knowing what to do with them, plus I haven't seen them in the grocery store here...
