Spelt Flour

Does anyone here cook with spelt flour? I'm considering eliminating wheat and

white flour from my diet. I really don't know anything about spelt and how it

will substitute for wheat.

Not an answer to your question--I've never cooked with

it. But I used to get spelt tortillas from Trader Joe

sometimes, and they would mold really quickly.

I used it once with 1/2 flour and my bread didn't rise well so I never tried it

again. I don't know much about it either. I did get a loaf of bread from Whole

Foods made with spelt flour and the same problem, it was moldy the next day so

that was enough spelt for me...................Donna

I bake my bread with spelt. It tastes fantastic. Much lighter than wholemeal

but, according to the ads, more nutritious.
