Especially for those of us who are fairly new to vegetarian meals and could benfit from the ideas. It's so exciting to shop for groceries when I know I will be eating wonderful food! This was mine: Pita Pockets with brown rice and marinated vegetables. Chop into bite-size pieces any combination of salad vegetables you like. I used freshly steamed beets, celery, mushrooms, zucchini, red pepper, green onion cucumber and feta cheese. Make a simple olive oil and lemon dressing with a little salt and pepper plus any other seasonings that grab you. Tofu, browned lightly in a pan with one packet taco seasoning (I like the chipolte one!) Stir in a can of plain or black refried beans and heat through. Serve in warm taco shells with chopped tomato, lettuce, black olives, salsa if you so desire you can also add guacamole or Better Than Sour Cream. Yummy! I ate a zucchini patty warm with veganaise mayo and a slice of raw onion, steamed baby red potatoes with dill, sauteed asparagus in blood orange olive oil with almonds sprinkled over the top. Oh yes, and a 1/2 can of Cherry/Vanilla Dr. Pepper (:-O I have to have my sugar baby! Guest guest Posted June 18, 2005 Report Share Posted June 18, 2005 Im a college student (final semester!) so my dinners aren't very fancy. I'm moving in a month back to the US so I'm trying to get rid of a lot of food so most of my dinners lately have been pasta with a red sauce with olives and mushrooms. Not very exciting, I know, but sometimes the simple recipes are the good reliable ones, especially for starting veggies. When Im not making pasta for dinner Im either having tofu of some sort or a potato recipe (of which there are a billion in germany). I also like rice with beans. Or else I'll go to the Mensa (cafeteria) which has a floor just for vegetarian with a changing menu everyday. The other day I have 'chile non carne with tofu' and 'spinach lasagna'. Mmmmm. Guest guest Posted June 19, 2005 Report Share Posted June 19, 2005 Being Father's Day and being the only vegetarian in the family, everyone else had BBQ burgers. I had two Ives fat free, meatless hot dogs, microwaved one minute and sliced lengthwise and put on a hamburger bun with spread and hickory smoked BBQ sauce. Everyone said my sandwich looked good and why don't I make them one next time. I had ranch and ketchup on it and onions tomato lettuce etc, corn on the cob, then chocolate cake, LOL. My neighbor, the nutcase who I think poisoned my dog gave hubby some cake. since hubby says that I am crazy to think he poisoned my dog, I let hubby have that cake instead of the trashcan...... funny... hubby hasn't called yet..normally he would have by now.......
