I made the flaxseed zucchini bread

I finally got around to baking. I made it Thursday night so I'd have

it for our horse camping trip. Don't ever bake when you're tired,

though. I ended up having to dig out salt as instead of measuring 3

1/4 teaspoons, I measured 3 teaspoons! I must of got enough out as it

tasted great!

 

Grinding flax seed wasn't easy, but I got most of it done and now

stored in my freezer.

 

The bread is yummy and I toasted up a thick slice for breakfast with a

bit of butter. It's kept me going all morning long.

 

I'll be making this again when my zucchini is ready from the garden!

Hi, could I have the recipe for the flaxseed zucchini bread? It sounds

delicious.

Also, I have a question. I have some ground flaxseed that I have had in an

airtight container for over a year. Do you think it's still good? I had

forgotten about it and am afraid to use it.

Kay - I'd toss it myself. But, you can open the container and smell

it - does it smell fresh and slightly nutty? If smells funny in any

way, toss it out!
