Very good quick bread, the consistency is similar to a beer bread or Irish soda bread. Good source of protein, selenium, omega-3, fiber and iron. I really enjoy a thin slice with a little peanut butter across the top. Freezes well also. Great bread to grab a slice of on the way out the door with your travel mug. " Healthy Sunshine Sunflower Seed and Flax Bread " 1/2 cup ground flaxseed 3/4 cup whole wheat flour 1/2 cup yellow cornmeal 1 cup all purpose flour 1 Tblspn. sugar 2 tsp. baking powder 3/4 tsp. salt 1 large egg 1 large egg white 1 cup rice milk or soy milk 1/4 cup canola oil or light olive oil 1/3 cup sunflower seeds, salted dry roasted or regular roasted Preheat over to 350 degrees, grease and flour one 8 1/2 X 4 1/2 loaf pan. In a large bowl, combine whole wheat flour, cornmeal, ground flaxseed, all purpose flour, baking powder and salt. Stir to mix well. In a small bowl combine whole egg, egg white, rice milk or soy milk and oil, whisk together. Make a well in the center of the dry ingredients and add the liquid ingredients. Stir to just combine, don't beat. Fold in the sunflower seeds. Scarpe batter into prepared loaf pan and bake 40-45 minutes, or until toothpick inserted comes out clean. Cool in pan on a rack for 5 minutes. Remove from pan and continue cooling on wire rack. ( I slice bread and freeze in individual wrap). I'm a primitive man, I said I am.
