I thought it would be good with fresh corn now showing up in stores around here and would be a nice change from the pasta salad I usually bring. Anyway, I found a pretty nice recipe in my Fannie Farmer cookbook. However, I don't keep fresh eggs on hand because I rarely use them. I do have a carton of an egg replacer, though. Does egg replacer work as well as fresh eggs in pudding-type recipes? I use a store brand of " liquid eggs " , as I call them. They are the same as Egg Beaters but cost less. Yes, they are as good as fresh eggs when I make corn pudding.
