I use mild salsa since I can't handle real spicy foood, my friends use medium and my sister uses hot and even add a diced habanero chile OUCH!!!. " Southwestern Salsa Pasta " 8 oz. rotini pasta (pasta twists) 1 16 oz. can black beans, drained and rinsed 1 cup fresh corn or frozen kernels thawed 1 10 oz. jar tomato salsa in mild, medium or hot 2-3 gr. onions thinly sliced Cook pasta according to package directions and drain. Meanwhile combine, beans, corn, salsa and green onions in a saucepan and bring to a simmer. Combine pasta and sauce, toss well and serve. " There is no way to peace; Peace is the way. " Source: A.J. Guest guest Posted June 29, 2005 Report Share Posted June 29, 2005 I've done a similar dish, only cut out the pasta and use brown rice (or whatever rice you like!) we either eat it with a spoon, chips, or in tortillas which we call " beach blanket burritos... for some odd reason..
