Could you explain what they are? finding soy milk with calcium doesnt seem too hard and though there are none with b12 here in germany, im looking forward to increasing my intake in the us when i get back. And to try almond milk and rice milk, never had them before and I love trying new things. I only eat eggs now and then, I get a lot of protein without them and again looking forward to all the foods with b12 (calcium and b12 are my main concerns for veganism if that wasn't clear already heh). And I'm looking forward to my vegan-day-a-week, but we'll see how things go about my food choices in the future. I agree about the names and label thing. They're nice so people can understand what you choose to eat (or not eat) but sometimes they just make things more confusing. One of my hangups that I'm trying to get over as far as names and labels are with fake foods. If a vegetarian label has the word chicken or beef or animal name on it, even if it has the word fake or veggie in front of it, it still doesn't make me want to look at the product. I find it especially confusing since they're places in organic (and not just veggie) sections in stores so unless you read the label closely sometimes you cant tell that it's veggie or not! Or you look at a product that has the word on it and it takes you a minute to realize its NOT veggie. To me 'flavored tofu' sounds a lot more appetizing than 'fake beef', but again its just a name thing, I will get this chip off my shoulder. I am so in Google search mode today! :^) Flax Eggs 1/4 cup = 1 egg Combine 1 cup water & 1 Tbs flax seeds (available at health food stores) in a 2 cup measure and microwave, uncovered, on full power boil for 2-3 minutes until the mixture has been reduced to about 3/4 cup. Scoop the mixture into a processor and mix for about 30 seconds. Strain. (It's OK if some seeds get through the strainer.) You'll have about 2/3 cup of the mixture, which looks like egg whites. Refrigerate for at least 15 minutes before using. Or cover and store, refrigerated, for up to 2 weeks. Other options: Egg Replacer = 1 egg 1-1/2 tsp powder egg replacer 2 Tbsp water Ener-G Egg Replacer is a powdered egg substitute carried by most health food stores. One box will last a long time. With some yummy chip dip that maybe includes soy or flax seeds or nutritional yeast (see where I'm going with this? heh). Ok now I'm hungry.
