I've eaten lots of breads with yogurt from the bakery...so maybe soy yogurt would work? I have been curious and just never got around to trying that. As a kid I used to bake all the time but relied on my parents for stove-cooked food most of the time, and then when I lived on my own I baked constantly...I just think baked food tastes great plus it's better than other options, say frying. And my studio in Germany has 2 stove burners, a sink, a fridge and no oven! There's one downstairs but the room requries a 50Euro deposit (whether you are just baking for an hour or throwing a party for an entire night) and I don't tend to have 50s to spare so I haven't had a chance to bake since ohhh August 2004. And my favorite veggie food is spinach lasagna so you bet I'm going to be making lots of that!
