I bought a bunch of dinosaur kale (yes that's the type) at Whole Foods yesterday and sauteed it. The only other way I have ever eaten kale was in Susie's soup recipe. It's also good sauteed. This is how I prepared it and served it over steamed rice. " Sauteed Kale " 1 bunch of kale washed, drained and chopped 2 cups of sliced crimini (brown) mushrooms 1 small onion chopped 2 garlic cloves minced dash of salt, pepper and red pepper flakes Optional diced jicama I heated a little olive oil and 2 tablespoons of water, and sauteed all ingredients until tender.
