Tropical Brown Rice Salad Recipe post-vegan

This is my lunch today. I forgot about this rice salad recipe until I ran

across it last week. Wonderful for a hot day. Very refreshing.

 

" Tropical Brown Rice Salad "

 

3 cups cooked brown rice, cooled

1/2 cup chopped papaya or mango

4 tablespoons chopped black olives

2 tablespoons chopped chives or green onion tops

1 tablespoon olive oil

2 tablespoons balsamic vinegar

3 tablespoons slivered toasted almonds

 

In large bowl combine all ingredients and mix. Chill.

When ready to serve line a large bowl with lettuce leaves and fill with salad.

Garnish with slices of papaya around the edges if desired.

Off to enjoy my lunch now.........................Donna

This looked so yummy that I made it for lunch today, and it was wonderful.

I didn't have black olives so I used green and I also added 1/2 of a peach

that I had left over. I put the salad with lettuce in a pita bread and it

was great. For the other 1/2 of the pita I added some veggie pate I had in

the refrig. I spread on the inside of the pita. That was fabulous also.

Thanks for this recipe and I'll type my veggie pate in the next post.
