Ideas please!

 

Its too hot to cook! I've been drinking juice

and soda... eating fruit. Ok...ok... and some

ice cream...

 

I'm looking for cool summer meals that don't

require cooking... or at least should be eaten cold.

Cold and crispy sandwiches along with a pasta or potato salad is nice. Make

big batches of potato salad - scoop some out for yourself and make a fresh

sandwich with it (veggies with oil/vinegar or whatever is desired) with

fresh pickle sticks and olives on the side.

 

I make big batches of lettuce salad and keep them in zipper lock bags. Green

and red leaf lettuces with chopped cilantro, mint, carrots, celery, green

onion and radishes. I actually like to put some cooked/cold, plain spiral

pasta in the salad. Have croutons, dressing and whatever toppings you want

on-hand.

 

Lately, for some dinners, I've been having cereal. StartSmart cereal (flakes

and oat clusters), vanilla flavored Silk soy (I do choco too), chopped

bananas and a few dashes of cinnamon. Sometimes I add raisins but I'm out.

You can do peanut butter on toast along with this.

 

Does anyone have experience with making gazpacho? How about other cold fruit

soups?

Fruit soups, gazpacho, tzatziki soup, grain salads, bean salads, green

salads, pasta salads, marinated/baked tofu (do a bunch and eat cold

for several days as is or in salads, sandwiches, & wraps), sandwiches...

Chattman. Is decidedly UNvegetarian, but you should be able to get

some good ideas from a perusal...

I love chef salads. Boil a couple of eggs in the morning (when it's

not as hot) and then just keep them in the fridge until ready to use.

 

Things I like in my chef salad:

kidney beans (rinsed)

hard boiled eggs

chopped cheese

grated carrots

mixed lettuce/spinach

arugula

sesame seeds

mandarin sections

peas

corn

Here are some of my too-hot-to-cook meal stand-bys:

 

Veggie wrap sandwiches or basically any sandwich

on a good bread, and " salads, salads, salads " .

Oh, and any dish i can cook in a crockpot.

So many things can be cooked in them. The dishes

often come out different, i find, but different is still

good especially when it doesn't add heat to my house. *s*
