Make big batches of potato salad - scoop some out for yourself and make a fresh sandwich with it (veggies with oil/vinegar or whatever is desired) with fresh pickle sticks and olives on the side. I make big batches of lettuce salad and keep them in zipper lock bags. Green and red leaf lettuces with chopped cilantro, mint, carrots, celery, green onion and radishes. I actually like to put some cooked/cold, plain spiral pasta in the salad. Have croutons, dressing and whatever toppings you want on-hand. Lately, for some dinners, I've been having cereal. StartSmart cereal (flakes and oat clusters), vanilla flavored Silk soy (I do choco too), chopped bananas and a few dashes of cinnamon. Sometimes I add raisins but I'm out. You can do peanut butter on toast along with this. Does anyone have experience with making gazpacho? How about other cold fruit soups? S. Fruit soups, gazpacho, tzatziki soup, grain salads, bean salads, green salads, pasta salads, marinated/baked tofu (do a bunch and eat cold for several days as is or in salads, sandwiches, & wraps), sandwiches... See if your library has _Cool Kitchen: 125 Delicious, No-work Recipes for Summertime or ANytime--No Oven, No Stove, No Sweat_ by Lauren Chattman. Boil a couple of eggs in the morning (when it's not as hot) and then just keep them in the fridge until ready to use. So many things can be cooked in them.
