That looks easy enough and I have a medium and a monster size cast iron so I'll

try those soon. I'll make the green salsa verde but not quite as hot as the

recipe I posted. I'ma chicken.....Donna

subprong <subprong wrote:Here is Emeril's recipe. He says to use a

heavy pan so that cast iron might

work nicely. Also, a few recipes said to use veg oil. I don't think I've

ever used that type of oil. I'm going to try that next time and maybe

sprinkle cumin at the end. It also says to store in a container at room

temp. if there happens to be any left over (heh, not on my watch).

Better than store bought chips, Emeril Lagasse has the recipe on Good

Morning America.

*Ingredients*

12 corn tortillas, cut into quarters

Vegetable oil if deep-frying

1 teaspoon salt

*Directions*

1. To fry the chips, add enough oil to come halfway up the sides of a large

heavy pot or electric deep fryer and heat over high heat to 360° F.

2. In batches, without crowding, deep-fry the tortillas until golden brown,

turning once, 2 to 3 minutes. Using a slotted spoon, transfer to paper

towels to drain.

3. Sprinkle lightly with salt to taste while still hot.

Serve immediately.

Yield: 48 chips

Donna, my last trip to the store I saw a big mound of tomatillos. It

reminded me of your recipe that I've been wanting to try (which may be the

verde that you just mentioned). If I make it to the store this weekend, it's

gonna happen. If not, it's going to be soon and I can't wait. I like

working/cooking with new produce that I haven't tried.

No worries, " you " won't be consumed around these parts. You're safe in this

veg group. ;)

hahaha Wait until you try that green (verde) salsa. I just made a huge batch

on 7-4 and filled up everyone's jar. When you buy your tomatillos, just email

if you need any help........Donna

haven't already 100's of times here!). When picking out tomatillos, what

should I be looking for or smelling for? Should I treat it as a red tomato

or a smaller roma tomato? Should they be firm, soft, etc? Thanks for any

info.
