I'll try some other recipes soon. It's jammed with creative easy dishes. I liked this one because the breadcrumbs and sauce make a thick Italian au gratin sauce and these two veggies were a good combo together. I'm sure during the last 10 mins. of cooking some grated mozzarella cheese would be delicious over the top also. I'm not a great microwave cook but if anyone wants to try the microwave, I think it would work just fine. I wonder where the name of this dish originated. " Tiela " 1/2 cup bread crumbs 1/2 cup parmesan cheese 1/4 tsp. salt 1/4 tsp. garlic salt 1/4 tsp. oregano 1/2 tsp. dried parsley 3 med. potatoes, peeled and sliced in thin rounds 3 small or medium zucchinis cut in medium thin round 1 15 oz. can stewed tomatoes undrained but broken up 1 8 oz. can tomato sauce 2 tablpsn. olive oil Mix first six ingredients in a small bowl and set aside. Mix tomatoes and tomato sauce together in another bowl and set aside. Preheat over to 350 degrees and lightly oil a small flat casserole dish. Something like an 8X10 size or near that size. Pleace layer of potatoes and zucchini on bottom of dish. Generously sprinkle bread crumb mixture over, add a layer of sauce. Repeat with layer of potatoes and zucchini, breadcrumb mixture and end with sauce. Evenly pour oilve oil over top and sprinkle with parmesan. Cover dish and bake until done abnout 45 minutes. Guest guest Posted July 28, 2005 Report Share Posted July 28, 2005 Sounds yummy...I'm already envisioning the different veggie possibilities, though I love the zucchini/potato combo...I'd toss in some spinach with this, I toss it in with lots of things due to it's vitamin boost. Guest guest Posted July 28, 2005 Report Share Posted July 28, 2005 Mel, This is a big hardback book and it's got 400 pages and it's endless with veggie recipes posted by people, some of the pages ahev 10 recipes alone on them. Lots of different type dishes. I found it at Goodwill a few years ago and it kind of got tossed on the bookshelf. I'm going to really make some side dishes out of it soon. Is there any certain veggie? I'll be happy to experiment with a certain vegetable request by you. I saw a few for okra that I've never seen before. Last night was a test so next time I will add some spinach also and maybe a few walnuts like the dish Katie posted. I might use a garlic clove or even some roasted red peppers diced up. It really was good. I'm going to have leftovers tonight.
