" Fresh Cherry Tomato Sauce " recipe post-vegan

try this one Chanda

I make this with either cherry tomatoes or the little grape tomatoes. You can

also use cilantro. I really prefer the cilantro version but parsley is what the

recipe calls for. It's your taste buds decision really. My pal makes his with

fresh basil. My sister even makes her with spinach. It's just a wholesome

quick and easy recipe sauce and you can change it around.

Don't laugh I have even dropped the lemon juice and added tequila

instead..........LOL

" Cherry Tomato Sauce "

2 Tblsp. olive oil

2 cloves of garlic minced

1/2 cup fresh parsley (or cilantro or basil)

1/2 tsp. salt

1/2 tsp. pepper

2 cups cherry tomatoes halved

1/2 tsp. lemon rind

pinch sugar

2 Tblsp. lemon juice

* parmesan cheese optional

In a skillet heat olive oil and saute garlic, 1/2 of the parsley, salt and

pepper for 2 mins.

Add tomatoes, lemon rind and sugar and saute over medium heat for bout 5 mins.

until the tomatoes are tender. Stril in lemon juice and balance of parsley.

Toss with cooked pasta and serve. Sprinkle with parmesan if desired.

Now I love onions so I always add with the garlic but it's up to you. Cheers!

Donna.

That sounds good too. I have a big old hangin'

heirloom tomato and I will do that right now. It's dinner time and I just love

balsamic vinegar. You will love the sauce. Tell me if you used parsley,

cilantro, spinach or basil....Hugs, D

balsamic vinegar. My daughter didn't touch it, but her friend (8 years old) ate

a ton of them, LOL.
