Guest guest Posted August 3, 2005 Report Share Posted August 3, 2005 Not too long ago I asked about using up my huge bag of frozen peas... someone (Katie?) mentioned pea soup... and nearly all of us countered with " but pea soup is usually made with dried peas " ... So, just to prove me wrong... while I was leafing through my soup notebook for the recipes for Chanda, I came across this soup I hadn't tried... I had to make dinner early today since I won't be here when DH gets home, so I made soup this morning, and had some for lunch. It was just luscious! You MUST LIKE PEAS for this one though - it's all pea! :-) Sweet Pea Soup with Quinoa 1/2 c quinoa, rinsed and drained 2 tsp vegetable oil 1 medium onion, chopped (2/3 c) 3 c vegetable broth 4 c shelled fresh or frozen peas (4 lbs. unshelled) 6 oz. plain soy yogurt (I used silken tofu) 1/2 tsp salt 1/4 tsp white pepper (I just used black) 2 tbsp shredded fresh mint leaves Cook the quinoa in 1 c water. Set aside. Heat the oil in a large pan. Add the onion and cook until softened. Add the broth and bring to a boil. Add the peas and reduce heat to medium. Simmer until peas are tender (about 5 minutes). Reserve 1/2 cup peas. Ina food processor or blender, puree mixture (in batches if necessary) until smooth. Press through a fine mesh sieve (I just ran the processor longer). Stir in reserved peas, cooked quinoa, yogurt, salt & pepper. Serve hot, garnished with mint.
