This is a recipe from the Indian lady I work with. She brings this to the

potlucks here for we 4 vegetarians.

" Curried TVP on Rice "

1 1/2 ounces of TVP flakes or granules

8-9 ounces veggie broth or water

1 onion chopped

2 Tblspn. canola oil or (ghee clarified butter)

2 tsp. curry powder

2 tsp. lemon juice

1 small apple (I peel mine) chopped

1 tsp. coconut (optional)

1/4 cup raisins

2 tsp. ketchup

2 cloves

1/4 tsp. seal salt

(when done cooking I stir in some chopped water chestnuts ot diced jicama)

cook rice and set aside

Simmer TVP in broth or water on very low for 5 mins.

In large span saute onion in oil for 10 minutes.

Gradually sprinkle in the curry powder, stirring all the time until smooth.

Add lemon juice and the balance of the ingredients. Stir in TVP with liquid,

cover, and simmer on very low for about 15-20 mins. Check to make sure there is

still liquid, add a little water if necessary. Some TVP soaks up the liquid a

little more than other brands.

Serve over rice. This is delicious and I'm not a big fan of curry.

Jenny, warm welcome to the group. Yes a lacto-ova vegetarian does have dairy

and eggs in their diet.

TVP is Textured Vegetable Protein. They are plain and dry granules that many

use to substitute for me@t products. Some of us just use it as an ingredient

and don't look at it as a substitute.

You can add spices and liquid to the granules (and as tofu) it will take on

the flavor of whatever you give it. Some packages of TVP come pre-spiced

(Italian, Mexican styles etc). As well I think you may find the product

labeled as TSP or Textured Soy Protein.

Warm welcome once again. :)

Oh yum! I love curries! In fact I have a can of coconut milk burning a

hole in my pantry. Perhaps I'll make some curries this weekend; we do

have a lot of rice to get through.
