VEGAN SPICEY RECIPE Hi Chanda

Thai Fried Rice with Broccoli and Curry Sauce

 

Cook desired amount of jasmine rice however you cook it, steam it whatever.

While that is cooking start your broccoli. Stir fry the broccoli in some sesame

oil. Go a little heavy on the oil, and it must be sesame oil. Add some soy sauce

and garlic powder to taste, the more the stronger, and add some sugar. You will

be surprised at how much sugar you use. For two bunches of broccoli I used about

3 or 4 tbs. of sugar. Or you could use a sugar sub if you want. You want the

broccoli to have a teriyaki sort of flavor. If you mess up and add too much soy

sauce, no problem just dilute it with a little veggie stock or even water. Add a

ton of garlic powder :o) Just stir fry to the doneness that you like.

Next fry the rice the same way, in the sesame with the soy sauce, garlic powder,

and sugar. I added tiny bits of green pepper. You can add any veggie really,

just make sure it's chopped well. Add a ton of garlic powder :o)

Now the awesome curry sauce.

1 can of coconut milk, about 4 heaping tbs. of peanut butter, and the key

ingredient is Thai curry paste. The green kind, the brand is maesri green curry

paste. you can get this at an Asian market, or if not you can buy it on line.

It's about 80 cents per can, and a can lasts forever. Be careful, you can always

add more but ya can't take it out, LOL. I use a good heaping teaspoon which

makes the sauce quite spicy, but I am used to Thai foods that are hot, so start

out with a lot less if you are not. Then add some curry powder, I use a lot, I

guess I used about 2-3 tablespoons. (you can freeze the leftover curry paste)

just stir now and then over a low flame and the sauce will thicken a little. In

and about 5 minutes or so.

When done, put the broccoli over the rice and top with the curry sauce. You will

be smiling.

notes or if I make changes when I post recipes. There's always a dash of this,

Maybe make a separate batch for you and your nephew and his friends, they will

probably like it a bit hotter than you :o)
