It can be tough to find " vegetarian " cheese..and when you're feeding

a family, expensive, too. Outside of mozerella (I cannot spell that

today) & eating out italian & mexican - we work hard to find animal

friendly cheese. I buy good cheese and don't use it randomly in

food - the kids like fanicier cheeses with crackers & can name some

unusual ones, which is funny to me!

I love trader joe's cuz they have relatively affordable vegetarian

cheeses, just the plian cheddars and jack cheese, that make it

easier to make enchiladas, nachos & mac & cheese dinners. They have

some that are made from " microbial rennet " which they have assured

me is not animal based...hope I'm not being duped!!

I do just shrug and not read ingredients on some mozerella's - my

hubby loves the stuff, especially the good ones - and parmesans, my

kiddo's adore parmesan. We do what we can with in reason!!

Trader Joes also has lots of gelatin free yogurts!!!! HOORAY!!

A small aside...Melissa, I too am/was a teacher - home with kids now

& don't think I want to go back to it though..what grade?

Geez, I keep hearing about Trader Joe's and how awesome they are. Why

can't we have them in Toronto? :-(
