Guest guest Posted August 21, 2005 Report Share Posted August 21, 2005 Once in a great while I will have a bag of vine ripe tomatoes tossed my way and this makes a perfect sauce with them. I just love making dishes in the crockpot. This freezes well in ziploc freezer bags you can date. I will pull one out and put in the fridge before I go to work and then all I have to do is boil up pasta and warm the sauce for a fast dinner. " Crockpot Garden Fresh Tomato Sauce " 3 1/2 to 4 lbs ripe tomatoes, peeled and chopped 1 (6ounce) can of tomato paste 1/2 cup dry white wine (for non-drinkers use 1/3 cup white grape juice) 1 large onion, chopped 1 Tblspn. olive oil 4 large cloves of garlic, minced 2 tsp. dried basil 1/4 tsp. dried oregano 1/2 tsp. salt 1/4 tsp. black pepper 1/2 tsp. sugar (cuts down on the acid) 1 Tblspn. balsamic vinegar 1/4 cup fresh basil, chopped In crockpot mix together the tomatoes, tomato paste, wine, onion, olive oil, garlic, dried basil, oregano, salt and pepper. Cover and cook on low setting about 4 to 4 1/2 hrs. Stir in the sugar, vinegar and fresh basil. Increase the heat setting to high and cook uncovered for 1/2 hour to thicken the sauce slightly. NOTE* You can add sauteed mushrooms in at the end or even some Tofurky or Boca sausages " First there is a mountain, then there is no mountain, then there is.
