Guest guest Posted August 22, 2005 Report Share Posted August 22, 2005 Hi Jenni, When I make potato salad with red potatoes I steam those in quarters and leave the skin on or I peel just half the skin off. They are a different texture from the russets. The russets are better microwaved. I never boil any potato for potato salad. They seem to get mushy and water logged. Now doesn't some potato salad sound good? I'm making it for Labor Day! I also use Veganaise and dry mustard in my potato salad or I will use a sprinkle of wasabi powder instead of dry mustard. I actually saw that there is a new gadget.. a mashed potato cooker.. similar to rice maker .. in the jc penney catalog.. I thought it was funny!
