This is a favorite of mine from a woman I worked with years ago, she was from Ghana. This recipe is suitable for the crockpot or stove top. " Lentil Vegetable Soup from Ghana " 1 cup lentils (I use green or brown my sister uses red) 2 tsps. olive or canola oil 2 cloves of garlic minced 2 onions chopped 1/2 tsp. saffron threads crushed (try to use these, it makes the soup) 2 celery stalks sliced 2 carrots sliced med. thin 1 turnip peeled and diced 1 cup fresh tomatoes diced (I leave the peel on but you can peel) 8 cups of vegetable broth or use water and veggie bouillon cubes 1 Tblspn. fresh chopped parsley 1/4 tsp. red pepper flakes dash of cumin salt & pepper to taste 1 Tblspn. lemon juice If making in the crockpot saute the onions, garlic and saffron for a few minutes to blend the flavors with the saffron and transfer to the crockpot making sure you add the colorful saute oil also. Place the balance of the ingredients in crockpot and set on high for a few hours. At the end stir in the salt & lemon juice to taste. If making on the stove, saute the onions, garlic and saffron in oil in a dutch oven pan. Add carrots, celery and turnip, continue cooking for 10 mins. on med. low heat. Add lentils, broth, tomatoes, and parsley and turn to a boil. Add pepper flakes, cumin, pepper and turn heat to a low simmer and cook for 1 hr to 1 1/2 hrs. Stir occasionally.
