I was originally going to make up some garlic spinach but by the time I got done changing the cat litter and my daughter and I cleaned out the rabbits cage, then making the loaf and the mashed potatoes I didn't have the energy to make the spinach also. I will look around for a recipe. I think way back when I was first married my husband used to make creamed spinach once in a while. When I find one I will post if for you. Guest guest Posted August 27, 2005 Report Share Posted August 27, 2005 Hi: I have not tried this recipe it is from Lean Luscious and Meatless, although I don't think I have ever not liked a recipe from this book. It sounds good and I may try it soon. CREAMY CORN AND SPINACH 2 tsp vegetable oil 1 cup chopped onions 1 1-pound cram-style corn 1 10 oz, package frozen chopped spinach thawed and drained well. 1/4 tsp pepper salt to taste TOPPING 2 TBS wheat germ 2 TBS grated parmesan cheese 2 tsp butter Preheat oven to 375 degree's Lightly oil a 1-quart baking dish and spray with a nonstick cooking spray. Heat oil in a medium skillet over medium heat. Add onions and cook, stirring frequently, until onions are lightly browned and edges begin to crisp, about 10 minutes. Add small amounts of water if necessary to prevent sticking. Place browned onions in a large bowl. Add corn, spinach, slat and pepper. Mix well. spoon into prepared baking dish.
