Thanks for the ideas, Donna. I especially like the zucchini one. I'm dreading

my first winter as a vegeterian. I love stews, but I will miss the nicely

priced fresh veggies.

 

Oh by the way, I bought paper tonight. I'm a printing fool. . .

thanks for that tip and some of the others. I have very good luck with red

potatoes in a place produce bag and I tie it shut with one little hole or they

form moisture, I do the same with zucchini. I have noticed if the zucchini is

extremely dark green it's sometimes bitter so I peel the skin off and then

there's no problem. Have you ever noticed that? Donna

Eggplant - I wrap paper towel around it.

 

Asparagus - Do Donna's trick with a glass of water - like flowers.

 

Celery - Mom wraps hers in aluminium foil.

 

Onions - I learned this trick on my frugal living group - Chop up and store one

cup in freezer bags and freeze. I was surprised that it worked. I just grab a

bag and fry up. Of course, I won't use these in fresh stuff.

 

Good luck - let us know if you learn any neat things. I'm always open to new

ideas. I'm still excited about the bean water - freezing in ice cube trays.

Jenn,

if you can get good priced fresh veggies now than stock up and start

freezing your veggies. That way you can make up bags of mixed veggies

which can then get thrown into your stews this winter.

 

Some instructions say to blanch before freezing, but I just cut mine

up into the size I want and depending on the water content of the

produce I either lay them out of a cookie sheet so each piece freezes

seperately then I bag them, or I just throw them into a freezer bag,

like carrots and green beans.

 

I also got my food dehydrator out last weekend and dried some of my

carrots. I had so many, that I wanted to save room in my freezer for

other things. I think I'll dry some onions, too.

I do this with berries...only skip the cutting part:)

Denise - if you dry the onions.. be prepared for your whole house to

smell of onions for a couple of days!!! Garlic too.... put the

dehydrator on the porch if you can. :-)

 

I highly recommend Mary Bell's Complete Food Dehydrator Cookbook to

any one interested in drying food...
