I just wanted to say that i have seven wonderful

recipes saved up to use when I get my paycheck. I

needed a change and your recipes are truely

inspiring...

I am sick of Kale and potatos, Rice, and pasta with

plain ol' marinara sauce.

I also just noticed that my favorite marinara sauce

has the dreaded Partially Hydroginated oil in it. I am

so sad. It will be the last jar I buy. I buy it

because it's tasty and CHEAP! and now I know why. I

hate being poor. The BF's miltary housing needs to

come through soon but by then he'll be overseas...grr.

Hate the military.

 

On that note: What kinds of fast and cheap meals do

you guys cook? I am vegan, but I am very good at

veganizing almost everything you guys put out there. I

am usually at work (the high school I teach at) until

8 or 9 at night so I either eat late or take lunch AND

dinner with me to work so I can have foods. Plus no

fridge or microwave access after 4 pm up there...blah.

Poor? I'm so poor I can't even afford to pay attention!! hee hee hee!

My fast and cheap meals are usually soups, cans of vegetables from the food bank

with beans, onions, garlic, whatever added. I'll make a big pot, eat it 2 or 3

days, then the veggies are yucky mushy so into the blender, strain out any

stringy bits and have drinkable soup, base for next pot of soup, liquid for

casseroles or bread if I'm feeling really ambitious! I freeze it in ice trays +

then put up in plastic bags.

Mel - I know how you feel about finding an ingredient in something

that you really like. I was very dissappointed to find gelatin in the

Brumel & Brown yoghurt spread.

 

Hey, I know it seems you don't have a lot of time, but here's a really

cheap way to get your marinara sauce. Plain ol' tomato sauce is really

cheap, under $1. Add whatever spices you want, including the tiniest

pinch of sugar. Keep experiementing until you get the flavor that you

like.

 

Also, right now zucchini should be pretty cheap and is very versatile.

Or try a spaghetti squash instead of pasta to go with your marinara

sauce. I was pleasantly surprised at how well that tasted.

 

I, too, feel inspired and really enjoy all the recipes from here. I

think since being on this group I have allowed myself to be more

adventurous in the kitchen and more forgiving of myself. I used to

only make a recipe in which I had all the ingredients, now I

substitute like crazy based on what I have in the house. It works great!

Beans & rice, baby! My favorite cheap meal. dried beans are cheaper

than canned. Onion, lots of garlic & a few spices and you're set...

 

Movers just left with all our stuff... funny how we thought we had so

little (I guess compared to a lot of people we do; we're not

collectors or savers much)... and yet it was estimated at 10,000

pounds! Granted, there's a lot of packing material and boxes, but

wow, kinda makes you think just how much we consume.

My grandmother used to tell my cousins (my two aunts with 6 and 7

kids each lived together across the street, and my grandmother lived

with them for awhile), " We're not poor, we're broke. " That made lots

of difference in self esteem....

 

I briefly scanned some of the responses, and I would second the

beans and rice suggestion. Few things are cheaper and more

satisfying than black beans, brown rice, steamed corn tortillas and

a fresh made salsa. Cooked cereal is inexpensive for breakfast,

especially if you buy in bulk sections and are not paying for the

packaging. If you can find bulgar, or you can use couscous as a

substitute, you can make a tabouli with a can of beans, maybe some

sunflower seeds (usually the cheapest of the oil seeds in the bulk

sections of the stores here), and this can make lots for a couple of

dollars, and this doesn't need cooking. The kind of bulgar we get

here takes 2 hours to soak in cold water, but that just means a

little planning ahead. While fresh herbs are best, this works ok

with dried herbs, so nothing needs to be refrigged. Just have a

fresh lemon or lime to give it at least that....

 

Wild crafting extends my food money at times. For one thing, walking

along, I pick off a pine or fur needle to chew on. All pines and

furs are nontoxic, their needles have a fresh fruity taste, and they

provide loads of antiozidants. (If you want to explore other

evergreens, you'll need to be able to tell a juniper from a hemlock,

which not everybody can do.) The eariest vegetarian I know of was a

woman who lived in what is now Texas about 10,000 years ago. They

can tell she was a vegetarian by a mineral analysis of her bones. So

there must be enough to eat there to be a vegetarian by wildcrafting.

 

And it may not make immediate sense, but one low cost way to extend

your food dollar can be by sharing. There must be a gazillion other

military families in the same situation as you. If you got a church

or some other community place with a good kitchen, see if you can

start a community meal. My experience in doing this is that food

seems to come out of nowhere, and you'll eat very well....
